In a large skillet over medium heat, brown your beef or pork. Add the garlic and saute for 30 seconds. Add the cabbage/coleslaw, ginger, soy sauce, and saute until desired tenderness.
Make a well in the center of your mixture and add the egg. Scramble until done.
Stir in sriracha, drizzle with sesame oil, and sprinkle the green onion on top. Add any additional sriracha and soy sauce to taste.
