Keto Broccoli Cheese Soup

This delicious Broccoli and Cheese Soup will make you forget that you're even on a diet. It is also the perfect meal for meal prepping or just having left overs for the next day. Nothing beats coming home from work and realizing you have dinner ready to eat, just need to warm it up!

Ingredients

 4 cups broccolichopped
 4 garlic cloves
 3 ½ cups chicken broth
 1 cup heavy cream
 3 cups cheddar cheeseshredded

Directions

In a large pot over medium heat, saute garlic until fragrant. About 1 minute.

Add in the chopped broccoli, heavy cream, and chicken broth. Bring heat to a boil, then reduce to a simmer. Let simmer for 10-20 minutes until broccoli is nice and tender.

While keeping on a low simmer, slowly start to add in your shredded cheese while stirring constantly.

Remove from heat once all cheese is melted, and serve!
