Preheat oven to 400 F. Cover a pizza pan with parchment paper. Mix the cheeses together and then spread evently over the parchment paper into a circular shape. Bake for 5 minutes. Pour off any excess oil after removing from the oven.
Spread chicken out over half of the cheese shell. Then add your peppers, tomato, and green onion. Fold the cheese shell in half, covering the toppings you just added. Press it firmly so it stays folded, then bake for another 3-5 minutes.
For extra flavor serve with a side of salsa and sour cream.
