Keto Empanadas

Delicious meat-filled dough pockets perfect for all occasions!

Ingredients

For Dough
 ¾ cup mozzarella cheese, shredded
 ¾ cup almond flour
 2 tbsp cream cheese
 1 large egg
 ½ tsp salt
For Filling
 ½ lb ground beef
 1 tbsp taco seasoning
 ½ tsp salt
 ¼ tsp cumin
 ¼ tsp chili powder
 1 tbsp onions minced
 1 tbsp garlic minced
  pepper flakes

Directions

Filling

Preheat oven to 350°F.

In a large pan, brown ground beef.

Drain the meat and return to the pan.

Add in seasonings for the meat and stir until combined.

Dough

In a microwavable safe bowl, combine cream cheese and mozzarella cheese.

Microwave for 45 seconds, stir, and microwave again.

Mix in the almond flour, egg, and seasoning, stirring until well combined.

Roll the dough out between 2 pieces of parchment paper, to about ¼ in thick.

Using a knife or pizza cutter, cut 10 circles out of the dough and place on a sheet pan lined with parchment paper.

Place a spoonful of meat on top of each circle.

Fold the dough over and enclose the meat by pinching the edges and forming the dough into a half circle. With a fork crimp the edges to ensure the meat is not going to leak out.

Bake for 10-12 minutes, or until golden brown.
