Keto Stuffed Peppers

Make a hearty and satisfying weeknight meal with this comforting classic hot dish.

Ingredients

 6 medium green peppers, washed and seeded
 1 tbsp olive oil
 3 cloves garlic, minced
 1 lb ground beef
 14.50 oz diced tomatoes
 ½ tsp sea salt
 ½ tsp onion powder
 ¾ cup marinara sauce
 3 slices colby jack cheese, chopped
 3 slices mozzarella cheese, chopped
 2 tsp italian seasoning

Directions

Remove tops of peppers, hollow and throw out the seeds.

In a skillet, saute your garlic in olive oil until fragrant. Add in ground beef and cook until browned.

Mix in diced tomatoes, sea salt, Italian seasoning, and onion powder. Let simmer for another 5 minutes.

Stuff each hollowed green pepper with the beef mixture. Top each pepper with 1 tbsp marinara sauce and sprinkle with the cheese.

Coat the bottom of a baking dish with the leftover marinara sauce and place stuffed peppers on top.

Bake at 375°F degrees for about 20 minutes.
