Loaded Keto Cauliflower

Loaded with butter, cheese, and bacon. This mashed cauliflower is the ultimate keto comfort food.

Ingredients

 1 lb cauliflower florets
 4 oz sour cream
 1 cup cheddar cheese, grated
 2 slices cooked bacon, crumbled
 2 tbsp snipped chives
 3 tbsp butter
 ¼ tsp garlic powder
 salt and pepper to taste

Directions

Cut cauliflower into smaller florets and add to a microwave safe bowl. Add 2 tbsp water and cover with plastic wrap. microwave on high for 5-8 minutes until completely cooked and tender. Drain all excess water and let rest uncovered for a few minutes.

Add florets to your food processor, or high powered blender, and process until fluffy. Add in butter, garlic powder, and sour cream. Continue processing until it becomes a consistency similar to mashed potatoes. Move the mixed cauliflower to a bowl and add most of your chives, save some for topping later. Add half of the cheddar cheese and mix by hand. Add salt and pepper to taste.

Top the loaded cauliflower with the remaining cheese, chives, and bacon crumbles. Put back in the microwave, or under a broiler, to melt the cheese on top.

Divide the cauliflower into 6 or so servings. Serving size is roughly 1/2 of a cup.
